PALEO PUMPKIN PIE
Want pumpkin pie for Thanksgiving without any sugar or carbs? Easy! Hands down, this is the best pumpkin pie I have ever had. The crust is made from dates, walnuts, and coconut oil. It’s just to die for! I think you’ll like it too. It’s another creation from Julia Mueller.
This recipe’s crust is not LOW FODMAP or SIBO friendly but I personally did alright with just one slice. It was the 3rd slice that upset my stomach a little. What can I say? Pumpkin pie is my favorite but I learned my lesson. I’m going to try some LOW FODMAP/SIBO crust recipes! I’ll let you know how it goes. In the meantime, enjoy the filling. I’m going to put it in glasses, top it with whipped coconut cream and pecan shavings, and chill. Voila!
